Rava (Semolina) Laddu

Ingredients

2 cups fine semolina (available in Indian grocery stores)
1 3/4 cups shredded fresh coconut
2 cups sugar (vary the amount as per the sweetness of the sugar),
1/2 to 3/4 cup ghee,
cardamoms, almonds & raisins 

Method 

1. Roast semolina in ghee over medium heat. Keep roasting until the color turns golden brown and gives out aroma.

2. Now add coconut to semolina and again roast for approx. 10 minutes. Add cardamom powder to it.

3. Mix sugar with 1 cup water and heat to make a syrup of one string consistency.

4. As the syrup reaches one string consistency, mix roasted rava and coconut mixture into it. Stir while still on the heat for a minute or so.

5. Turn the heat off and keep mixing the mixture in half an hour intervals. 

6. After 2-3 hours, the mixture can take the form of ladoos. Now add nuts and raisins. 

7. Take some mixture on your palm and make round balls of desired shape. Ladoos are ready to eat. Store them in an airtight container.
