Karanji 

Ingredients 

1 cup semolina,
1 cup all purpose flour,
4 cups fresh grated coconut,
2 1/2 cups sugar,
4 tsp ghee,
1 tsp rice flour,
cardamom powder,
ghee / oil for frying,

Method

1) Mix semolina and flour. Add some hot oil / ghee and warm water / milk to make a hard dough and set aside under a wet cloth for an hour.

2) Mix together coconut and sugar and heat it.

3) After the mixture is cooked properly, add rice flour and cardamom powder to it and stir. This is known as 'Saaran' for karanji. Remove it from the heat and allow to cool.

4) Now remove the wet cloth and pound the hard dough to make it little soft.

5) Make small round balls of the dough using some ghee.

6) Heat some ghee or oil in a deep pan. Roll out each ball into 4 inch. diameter circular disc. Put some saaran on the disc. Fold the disc to join the edges. Use a paste of flour to stick the edges. Trim the edges with the help of edge cutter.

7) Fry karanjis in the hot oil or ghee. Remove when golden brown.
